Миндальное сабле

  • temperature 170°С
  • oven 10-12 минут

Сабле - традиционное французское печенье из песочного теста. Сабле выпекают круглой формы, а используют как подложку под муссовые пирожные или торты. Поэтому печенье очень тонкое - толщина готового не превышает 3-4 мм. Но сабле можно использовать и как отдельную выпечку - тогда оно может быть толщиной до 8-10 мм. Также в тесто по желанию добавляют цедру лимона, апельсина, лайма, пряности... А мы давайте приготовим миндальное сабле.

Вам понадобятся

  • 140 гр сливочного масла (жирность 82%)
  • 95 гр сахарной пудры
  • 210 гр муки
  • 50 гр миндальной муки
  • 50 гр яйца
  • соль

Как это приготовить?

Шаг 1

Взбейте размягченное сливочное масло. Масло должно слегка посветлеть и увеличиться в объеме.

Взбить масло можно сделать ручным венчиком или в комбайне, насадка «Весло» («Лепесток»).

Шаг 2

Добавьте сахарную пудру, миндальную муку, яйцо комнатной температуры.

Если яйцо холодное, его можно немного прогреть в микроволновке 15-20 секунд.

Шаг 3

Добавьте муку и соль, перемешайте, чтобы вся мука увлажнилась.

Шаг 4

Раскатайте тесто между двумя листами пергамента толщиной 3-4 мм. Уберите тесто в холодильник минимум на 3 часа, а лучше на ночь.

Шаг 5

Достаньте тесто из холодильника, снимите пергамент с одной стороны, переверните тесто – оно должно оставаться на пергаменте и снимите пергамент с другой стороны.

Шаг 6

Вырежьте из теста круги необходимого диаметра. Выложите их на перфорированный силиконовый коврик. Выпекайте в разогретой до 170°С духовке 10-12 минут.

Время выпекания зависит от толщины и размера вашего сабле. Если вы хотите, чтобы на готовом сабле был красивый узор «Клеточка», выпекайте печенье между двумя перфорированными ковриками. Придавливать печенье ничем не нужно.

Замешивать тесто можно и руками, но это дольше по времени и сложнее. В этом случае руки периодически опускайте в холодную, почти ледяную, воду, вытирайте насухо и продолжайте вмешивать холодное масло. Тесто не должно перегреваться!
