Печенье «Мадлен»

Нежное печенье в виде милых ракушек, по вкусу и текстуре напоминающее бисквит. Мягкое, вкусное, с легким ароматом лимона и медовой ноткой. Идеальное к чаю!

Вам понадобятся

  • 50 гр меда
  • 200 гр муки
  • 100 гр сахара
  • 60 мл молока
  • 3 яйца (150 г)
  • 10 гр разрыхлителя
  • 200 гр сливочного масла (помадка)
  • цедра одного лимона
  • стручок ванили

Как это приготовить?

Шаг 1

Для приготовления печенья «Мадлен» взбиваем размягченное сливочное масло (помадку) с сахаром, миксером или ручным венчиком в течение нескольких минут.

Шаг 2

Добавляем во взбитую посветлевшую масляную помадку яйца, теплое молоко и мед.

Шаг 3

Затем муку смешиваем с разрыхлителем, семенами ванили, цедрой лимона и солью.

Шаг 4

С помощью кондитерского мешка или ложки выкладываем тесто в форму «Мадлен»* и выпекаем при температуре 170°С от 8 до 20 минут. Если у вас силиконовые формы, то смазывать жиром их не нужно, так как в самом тесте большое содержание сливочного масла. При выпекании будьте внимательны, так как мед в выпечке, попадая в духовку, очень быстро окрасит ваши мадленки в золотистый цвет.

Классическая форма «Мадлен» сделана в виде створок раковины. Думаю, ничего страшного не произойдет, если вы приготовите это печенье в любой другой небольшой форме.

Замешивать тесто можно и руками, но это дольше по времени и сложнее. В этом случае руки периодически опускайте в холодную, почти ледяную, воду, вытирайте насухо и продолжайте вмешивать холодное масло. Тесто не должно перегреваться!
