Песочное тесто: сахарное

Поговорим сегодня о песочном тесте, а именно – о сахарном песочном тесте.

Я выделяю три вида песочного теста: сахарное, сабле/сабле-бретон и бризе.

Сабле/сабле-бретон

Это рассыпчатое и тающее песочное тесто, которое идеально подходит для печенья, как основа для муссов, чизкейков. Отличается тем, что в нем много сливочного масла и входит разрыхлитель.

Можно добавить в тесто цедру, пряности, какао... и получить много вариаций сабле.

Сабле мы уже с вами готовили – у меня на YouTube есть видеоурок, который называется – «Бретонское сабле с апельсином».

Сахарное песочное тесто

В отличие от сабле, в нем меньше сливочного масла и оно не такое пористое и сыпучее.

Сахарное тесто – это отличная основа для тартов и тарталеток.

Также на его основе делают некоторые виды печенья.

Существует еще миндальное сабле и миндальное сахарное тесто, с орехом, конечно, выпечка получается намного вкуснее.

А ведь знаете, ничего удивительного! Мы любим холодные чизкейки за то, что их просто готовить, легко менять вкусы и можно немного экспериментировать с текстурами.

Как это приготовить?

Шаг 1

Замешивать тесто можно и руками, но это дольше по времени и сложнее. В этом случае руки периодически опускайте в холодную, почти ледяную, воду, вытирайте насухо и продолжайте вмешивать холодное масло. Тесто не должно перегреваться!

Будем готовить: шокобисквит, вишню конфи, взбитый ганаш на молочном шоколаде, мусс на белом шоколаде, зеркальную глазурь.
