Ольга Ван-Юнг: слоеная «химия»

«Венская выпечка» - к ней я возвращаюсь снова и снова. А еще мне кажется, что я «заболела» Хлебом. Вы не представляете, насколько здесь важна химия! Как же глубоко нужно понимать все процессы: почему все происходит именно так и никак иначе?! Поэтому весной 2017 года я пошла на мастер-класс к Ольге за свежей дозой знаний. Иначе просто не живу. Ольга - волшебница слоеной выпечки. Она очень сильна в разъяснении химических процессов и, скажем о ней так: «Докопаться до истины». У Ольги своя школа в Израиле. Не перестаю ею восхищаться. Хрупкая, прекрасная, увлеченная, упорная, умная… И настоящий мастер своего дела. Как же глубоко Оленька знает всё обо всем и даже чуточку больше. Безмерно счастлива быть ученицей такого учителя! Ловлю каждый жест, каждое слово! Я всегда прихожу в полнейший восторг, когда вижу такое количество аккуратных волшебных слоев в тесте.



Это - «Улитка с заварным кремом и изюмом». Уверена, любят все. Так вот… слоено-дрожжевое тесто, на нашем украинском масле работает!!! К тому же, ручная раскатка!

Замешивать тесто можно и руками, но это дольше по времени и сложнее. В этом случае руки периодически опускайте в холодную, почти ледяную, воду, вытирайте насухо и продолжайте вмешивать холодное масло. Тесто не должно перегреваться!
